Ingredients
  

Vinaigrette Ingredients
  • 1 clove garlic clove Finely minced
  • 1/4 tsp Kosher salt Plus more to taste
  • 1 Tbsp Dijon mustard Plus 1 tsp, or more as needed
  • 1/4 cup lemon juice Plus more as needed
  • 1/2 cup organic extra-virgin olive oil Or canola oil
  • Freshly ground black pepper To taste

Method
 

Preparation
  1. Finely mince the garlic clove and sprinkle a pinch of kosher salt on it. Use the side of your knife to mash the garlic into a paste.
Combining Ingredients
  1. In a mixing bowl, whisk together the garlic paste and Dijon mustard. Gradually add fresh lemon juice and olive oil while continuing to whisk until emulsified.
Adjusting Seasoning
  1. Taste your vinaigrette and add more salt or lemon juice as needed. For a stronger flavor, add more mustard.
Storing and Serving
  1. Transfer the vinaigrette into a sealed jar or bottle. Store in the refrigerator for up to a week. Shake well before each use.

Notes

For a creamier version, add a tablespoon of Greek yogurt. Ensure your garlic is fresh for the best flavor. Experiment with different types of vinegar or add herbs like basil or oregano for varied flavors.
