Ingredients
  

Oatmeal Base
  • 1 cup rolled oats (certified gluten-free if needed)
  • 2 cups water or milk (dairy or non-dairy)
  • 1 tablespoon maple syrup or honey
  • ½ teaspoon cinnamon
  • a pinch of salt
Apple Topping
  • 1 medium apple, diced Honeycrisp or Granny Smith works wonderfully.
  • 1 tablespoon butter or coconut oil
  • 1 tablespoon maple syrup
  • ½ teaspoon cinnamon
  • a splash of water
Toppings (optional)
  • Chopped walnuts or pecans (to taste)
  • Raisins or dried cranberries (to taste)
  • Chia seeds or flaxseed (to taste)
  • Nut butter drizzle (to taste)
  • Extra cinnamon (to taste)

Method
 

Prepare Oatmeal
  1. Bring the water or milk to a light boil in a saucepan.
  2. Add the rolled oats and stir.
  3. Reduce the heat and cook for 5–7 minutes, stirring occasionally, until thick and creamy.
  4. Stir in the cinnamon, sweetener, and a pinch of salt.
Prepare Apples
  1. In a separate pan, heat butter or coconut oil over medium heat.
  2. Add the diced apples, cinnamon, maple syrup, and a splash of water.
  3. Cook until the apples are tender and lightly caramelized.
Serve
  1. Spoon the oatmeal into a bowl and top with the warm cinnamon apples.
  2. Add desired toppings and serve warm.

Notes

Store leftovers in an airtight container in the fridge for up to three days. To reheat, add a splash of water or milk in a saucepan and warm while stirring until the desired consistency is reached.
