  • 4 cups mixed greens (spinach, arugula, or spring mix) Use a variety of greens for different textures.
  • 2 pieces crisp apples (Honeycrisp or Granny Smith), thinly sliced Choose apples that maintain firmness.
  • ½ cup dried cranberries (or fresh cranberries, halved) If using fresh cranberries, sweeten during preparation.
  • ½ cup pecans, lightly toasted Toast just before serving for best flavor.
  • ¼ cup crumbled feta or goat cheese (optional) Garnish for added creaminess.
Dressing Ingredients
  • 3 tbsp olive oil For a rich flavor base.
  • 2 tbsp apple cider vinegar Adds tanginess.
  • 1 tbsp honey or maple syrup Adjust sweetness to taste.
  • 1 tsp Dijon mustard For a zesty flavor.
  • to taste Salt and pepper Season to your liking.

Method
 

Preparation
  1. Wash and dry the mixed greens thoroughly. Place them in a large mixing bowl.
  2. Thinly slice the apples and toss them lightly with lemon juice to prevent browning.
  3. Toast pecans in a dry skillet over medium heat for about 3–5 minutes until fragrant.
Assembly
  1. Add the sliced apples, cranberries, and toasted pecans to the bowl of greens.
  2. In a separate bowl, whisk together the dressing ingredients until emulsified.
  3. Drizzle the dressing over the salad just before serving. Garnish with crumbled feta or goat cheese if desired.

Notes

Serve chilled or at room temperature. Store leftovers with dressing separate for best results.
