Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté garlic until fragrant.
  3. Add the spinach and cook until wilted.
  4. Place the salmon fillets on a baking sheet lined with parchment paper. Season with salt and pepper.
  5. Top each fillet with the sautéed spinach and sprinkle with mozzarella cheese.
Cooking
  1. Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and the cheese is bubbly.
  2. Serve with lemon wedges.
