  • 4 large large egg yolks
  • 1 cup whole milk 225 ml
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt

  • 7-8 slices banana bread Preferably day-old for better absorption

Preparation
  1. In a medium bowl, whisk together the egg yolks, milk, vanilla extract, ground cinnamon, and salt until well combined. Pour this mixture into a shallow baking dish.
  2. Slice the banana bread into ¾ inch (2 cm) thick pieces. Lay the slices in the custard mixture, ensuring they are well coated. Let them soak for 15 minutes on each side (30 minutes total) to absorb the flavors.
Cooking
  1. Preheat a skillet over medium-low heat. Add a generous pat of butter.
  2. Once melted, add 2-3 slices of the soaked banana bread to the skillet. Cook for about 3 minutes on each side, or until they are golden brown.
Serving
  1. Serve the Banana Bread French Toast warm, topped with maple syrup and fresh berries.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a toaster oven or skillet over low heat.
