Main Ingredients
  • 4 medium sweet potatoes Any variety is fine, but orange-fleshed works best.
  • 2 cups cooked shredded chicken Can use rotisserie chicken for convenience.
  • 1 cup BBQ sauce Adjust quantity to taste.
  • 1 cup shredded cheese Cheddar or your choice.
  • 1/2 cup green onions, chopped
  • Salt and pepper to taste
  • Olive oil For rubbing on sweet potatoes.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the sweet potatoes with a fork, then rub them with olive oil, and season with salt and pepper.
Baking
  1. Bake the sweet potatoes for 45-60 minutes until tender.
Mixing and Stuffing
  1. In a bowl, mix the shredded chicken with BBQ sauce.
  2. Once the sweet potatoes are done, slice them open and fluff the insides with a fork.
  3. Stuff each sweet potato with the BBQ chicken mixture.
  4. Top with shredded cheese and return to the oven for 5-10 minutes until the cheese is melted.
Serving
  1. Garnish with chopped green onions before serving.

Notes

Serve warm with a salad or steamed vegetables. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave.
