Preparation
- Preheat the oven to 400°F (200°C).
- Wash and pierce the sweet potatoes with a fork, then rub them with olive oil, and season with salt and pepper.
Baking
- Bake the sweet potatoes for 45-60 minutes until tender.
Mixing and Stuffing
- In a bowl, mix the shredded chicken with BBQ sauce.
- Once the sweet potatoes are done, slice them open and fluff the insides with a fork.
- Stuff each sweet potato with the BBQ chicken mixture.
- Top with shredded cheese and return to the oven for 5-10 minutes until the cheese is melted.
Serving
- Garnish with chopped green onions before serving.
Notes
Serve warm with a salad or steamed vegetables. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave.
