  • 1.5 pounds boneless, skinless chicken breasts, cut into bite-sized pieces Use fresh chicken for best flavor.
  • 1 cup Tzatziki sauce Store-bought or homemade.
  • 1 cup cherry tomatoes, halved Pick ripe, sweet tomatoes.
  • 1 cup zucchini, diced Fresh zucchini works best.
  • 0.5 cup red onion, chopped Can substitute with yellow onion.
  • 0.5 cup feta cheese, crumbled Use for added creaminess and flavor.
  • 2 tablespoons olive oil Extra virgin is preferred.
  • 1 teaspoon dried oregano For seasoning.
  • to taste Salt and black pepper Adjust based on preference.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C). Lightly grease a 9x13-inch baking dish with olive oil.
  2. Add the chicken pieces, cherry tomatoes, zucchini, and red onion to the prepared baking dish.
  3. Drizzle with olive oil and sprinkle with dried oregano, salt, and pepper. Toss everything to combine well.
  4. Spoon the Tzatziki sauce evenly over the casserole mixture. Gently mix to coat.
Cooking
  1. Bake uncovered for 30-35 minutes or until the chicken is cooked through and the vegetables are tender.
  2. Remove from the oven, sprinkle with crumbled feta cheese, and serve hot.

Notes

Serve warm with a side salad or warm pita bread. You can marinate the chicken in Tzatziki for more flavor or substitute proteins as desired.
