  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup semi-sweet chocolate chips Use high-quality chocolate chips for best flavor.

Preparation
  1. In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  2. Beat in the egg and vanilla extract, mixing until smooth.
  3. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  4. Gradually mix the dry ingredients into the wet ingredients until just combined.
  5. Gently fold in the semi-sweet chocolate chips until evenly distributed.
Cooking
  1. Preheat your waffle maker according to the manufacturer's instructions.
  2. Place about 2 tablespoons of dough in the center of the waffle iron. Close gently and cook for 3 to 5 minutes, or until golden brown.
  3. Carefully remove the waffle cookies from the waffle iron and transfer them to a wire rack to cool. Repeat the process with the remaining dough.
Serving
  1. Serve warm or at room temperature, optionally with ice cream, chocolate syrup, or powdered sugar.

Notes

To store, place cookies in an airtight container for up to a week at room temperature. For longer storage, freeze them for up to three months. Reheat in a toaster oven or microwave when ready to enjoy.
