Preparation
- Peel and thinly slice the cucumber, removing seeds if necessary.
- Place the cottage cheese in a medium mixing bowl.
- Add cucumber slices and chopped green onions to the bowl.
- Drizzle with lemon juice or vinegar, and gently stir until well combined.
- Season with salt and black pepper to taste.
- Refrigerate for at least 15 minutes before serving to allow flavors to meld.
Notes
Serve chilled or at room temperature. Pairs well with grilled chicken or turkey bacon. Garnish with additional green onions or dill.
