  • 1 cup full-fat cottage cheese About 240 g
  • 3 large eggs Ensure they are at room temperature

  • 1 tbsp psyllium husk or almond flour For added structure

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Lightly grease a loaf pan or line it with parchment paper.
  2. Add the cottage cheese and eggs to a blender or food processor. Blend until smooth and creamy, about 30 seconds.
  3. Pour the batter into the prepared loaf pan and tap gently to release any air bubbles.
Baking
  1. Bake for 35-40 minutes, until the top is golden and a toothpick comes out clean.
  2. Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
