  • 1 pound shrimp, peeled and deveined Use fresh shrimp for best flavor, but frozen is acceptable if thawed.
  • 2 tablespoons butter
  • 4 cloves garlic, minced Adjust amount to taste.
  • 1 cup heavy cream For a lighter version, use half and half.
  • 1 tablespoon lemon juice
  • to taste Salt and pepper
  • for garnish Chopped parsley
For the Mashed Potatoes
  • 2 pounds potatoes Prepared into mashed potatoes.

Preparation
  1. In a large skillet, melt butter over medium heat.
  2. Add garlic and sauté until fragrant, about 1 minute.
  3. Add shrimp and cook until pink and cooked through, about 3-4 minutes.
  4. Pour in heavy cream and lemon juice, stir to combine, and let simmer for another 2-3 minutes.
  5. Season with salt and pepper to taste.
Serving
  1. Serve the creamy garlic shrimp over fluffy mashed potatoes and garnish with chopped parsley.

Notes

Store leftovers in separate airtight containers for up to two days. Reheat gently. Add more butter or heavy cream for creamier mashed potatoes. Customize with spinach or sun-dried tomatoes for added flavor.
