Preparation
- Preheat your oven to 375°F (190°C).
- In a large baking dish, combine the chicken breast with the rice.
- Pour the chicken broth and tzatziki sauce over the chicken and rice.
- Add the diced tomatoes, cucumber, red onion, garlic powder, salt, and pepper.
- Stir to combine all the ingredients well.
- Cover the baking dish with aluminum foil and bake for 30-35 minutes.
- Remove the foil and bake for an additional 10-15 minutes until the chicken is cooked through and the rice is tender.
- Garnish with fresh dill before serving.
Notes
Store leftovers in an airtight container in the refrigerator for 3-4 days. Reheat in the microwave or oven until heated through. You can marinate the chicken in tzatziki sauce for extra flavor.
