  • 1 lb chicken breast Boneless, skinless
  • 1 cup uncooked rice Use white or brown rice
  • 2 cups chicken broth Or vegetable broth for a vegetarian version
  • 1 cup tzatziki sauce Store-bought or homemade
  • 1 cup diced tomatoes Canned or fresh
  • 1/2 cup chopped cucumber For freshness
  • 1/4 cup chopped red onion For flavor
  • 1 teaspoon garlic powder
  • to taste Salt and pepper For seasoning
  • for garnish Fresh dill Optional

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large baking dish, combine the chicken breast with the rice.
  3. Pour the chicken broth and tzatziki sauce over the chicken and rice.
  4. Add the diced tomatoes, cucumber, red onion, garlic powder, salt, and pepper.
  5. Stir to combine all the ingredients well.
  6. Cover the baking dish with aluminum foil and bake for 30-35 minutes.
  7. Remove the foil and bake for an additional 10-15 minutes until the chicken is cooked through and the rice is tender.
  8. Garnish with fresh dill before serving.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days. Reheat in the microwave or oven until heated through. You can marinate the chicken in tzatziki sauce for extra flavor.
