Ingredients
  

For the cookies
  • 2.5 cups all-purpose flour
  • 1 teaspoon nutmeg For cookies

  • 0.75 cup unsalted butter (softened to room temperature)
  • 0.75 cup granulated sugar
  • 0.25 cup brown sugar (light or dark)
  • 2 large egg yolks
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon rum extract Up to 1 teaspoon if preferred
  • 0.33 cup eggnog
For the frosting
  • 0.67 cup unsalted butter (salted works too) Softened
  • 3-4 cups powdered sugar
  • 0.25 teaspoon nutmeg
  • 0.5 teaspoon rum extract
  • 0.25 teaspoon salt
  • 3-5 tablespoons eggnog Adjust for consistency
  • 1-2 tablespoons cornstarch (or cornflour, if needed) Used to adjust frosting consistency

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, nutmeg, cinnamon, baking soda, and salt until blended.
  3. In another bowl, cream the softened butter, granulated sugar, and brown sugar until smooth and fluffy.
  4. Add in the egg yolks, vanilla extract, rum extract, and eggnog. Mix until everything is well combined.
  5. Gradually add the dry ingredients to the wet mixture. Stir until fully incorporated.
  6. Scoop tablespoon-sized portions of dough onto a baking sheet lined with parchment paper, giving space between each scoop.
Baking
  1. Bake for 10-12 minutes or until the cookies are lightly golden.
  2. Allow them to cool completely on a wire rack.
Frosting
  1. For the frosting, beat together softened butter, powdered sugar, nutmeg, rum extract, salt, and eggnog until smooth.
  2. Adjust the consistency with cornstarch or more eggnog as needed.
  3. Frost the cooled cookies generously and beautifully.

Notes

Ensure your butter is at room temperature for easy creaming. Use fresh spices for the best flavor impact. If you prefer extra spices, feel free to add more nutmeg or cinnamon. Experiment by adding some chopped nuts or chocolate chips for varied textures.
