  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon turmeric powder
  • 4 cups vegetable broth
  • 1 can coconut milk
  • 1 lime, juiced
  • Salt and pepper, to taste
  • Optional toppings: fresh cilantro, sliced green onions

Method
 

Preparation
  1. In a pot, heat olive oil over medium heat.
  2. Add chopped onion and garlic, sauté until softened.
  3. Stir in ginger and turmeric, cooking for an additional minute.
  4. Pour in the vegetable broth and bring to a boil.
  5. Reduce heat and let simmer for 10 minutes.
  6. Stir in coconut milk and lime juice.
  7. Season with salt and pepper.
  8. Serve hot, garnished with cilantro and green onions if desired.

Notes

This soup can be customized with your favorite vegetables like carrots or spinach. Adjust the spice levels by adding red pepper flakes or fresh chili for extra heat. Fresh herbs can enhance the flavor, so experiment as you wish. If you have leftovers, store the soup in an airtight container in the refrigerator for up to 3-4 days. It can also be frozen for later use.
