  • 4 cups bolillo bread, cut into cubes Stale bread is recommended for better absorption.
  • 1 cup brown sugar
  • 1 cup water
  • 1 cup milk
  • 1/2 cup raisins
  • 1/2 cup chopped nuts (walnuts or pecans)
  • 1 teaspoon cinnamon Don’t skimp on spices - adjust to taste.
  • 1/2 teaspoon vanilla extract Adjust according to preference.

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a saucepan, combine water and brown sugar, and bring to a boil until the sugar dissolves.
  3. Remove from heat and stir in milk, cinnamon, and vanilla extract.
  4. In a baking dish, layer bread cubes, raisins, and nuts.
  5. Pour the sugar mixture over the layered bread. If using, add cheese slices on top.
Cooking
  1. Bake for 30-40 minutes, or until the top is golden and the bread has absorbed the liquid.
  2. Let it cool slightly before serving.

Notes

Serve warm, with options like vanilla ice cream, caramel sauce, or fresh cream. Store in an airtight container for up to 4 days in the refrigerator or freeze for up to 3 months.
