  • 6 pieces hardboiled eggs, peeled and halved Use well-cooked eggs for easy peeling.
  • 1 small-medium ripe avocado Choose a ripe avocado for creaminess.
  • 2 tbsp mayo Adjust amount for desired creaminess.
  • 1 tbsp lime juice Adjust lime juice to taste.
  • to taste Salt Add salt according to preference.
  • as needed Sliced deli chicken ham, cut and rolled Substitute with turkey bacon for alternative.
  • a few drops Green food coloring Adjust for desired color intensity.
  • as needed Toothpicks For securing the rolled ham.

Method
 

Preparation
  1. Start by peeling and halving the hardboiled eggs. Carefully scoop out the yolks and place them in a medium-sized bowl.
  2. To the yolks, add mayo, lime juice, salt, avocado, and a drop or two of green food coloring. Mix and mash until you achieve a smooth consistency.
Assembly
  1. Use a spoon or piping bag to fill the white halves of the eggs with the green yolk mixture.
  2. Cut the slices of chicken ham in half. Roll each piece and secure it with a toothpick.
  3. Position the rolled ham on top of the filled egg halves, inserting the toothpick into the egg to hold it.
  4. Your creative green eggs and ham treat is ready to serve!

Notes

Store leftovers in an airtight container in the refrigerator for up to two days. For better taste and texture, enjoy fresh. Prepare the filling separately if making ahead of time.
