Preparation
- Season the chicken breasts with salt, pepper, and one tablespoon of olive oil. Let them marinate for at least 15 minutes.
- Preheat your grill to medium-high.
Cooking
- In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Add the asparagus during the last 2 minutes of cooking. Once cooked, drain and set aside.
- Grill the marinated chicken breasts for about 6-7 minutes per side, or until the internal temperature reaches 165°F. Remove from the grill and let rest for a few minutes.
Combining and Serving
- In a large bowl, toss the cooked pasta and asparagus with the remaining olive oil and pesto until well coated.
- Slice the grilled chicken and place it atop the pasta mixture. Gently toss to incorporate everything.
- Serve warm, topped with grated Parmesan cheese if desired.
Notes
This dish is best served warm right after preparation. Consider pairing it with a side salad or garlic bread.
