  • 2 pieces boneless, skinless chicken breasts Season with salt and pepper
  • 8 ounces whole wheat or regular pasta Pasta of your choice
  • 1 cup fresh asparagus, trimmed and cut into 2-inch pieces
  • 1 cup homemade or store-bought pesto Using fresh pesto enhances flavor
  • 2 tablespoons olive oil Additional olive oil for tossing
  • to taste Salt and pepper For seasoning
  • to taste Grated Parmesan cheese Optional for serving

Method
 

Preparation
  1. Season the chicken breasts with salt, pepper, and one tablespoon of olive oil. Let them marinate for at least 15 minutes.
  2. Preheat your grill to medium-high.
Cooking
  1. In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Add the asparagus during the last 2 minutes of cooking. Once cooked, drain and set aside.
  2. Grill the marinated chicken breasts for about 6-7 minutes per side, or until the internal temperature reaches 165°F. Remove from the grill and let rest for a few minutes.
Combining and Serving
  1. In a large bowl, toss the cooked pasta and asparagus with the remaining olive oil and pesto until well coated.
  2. Slice the grilled chicken and place it atop the pasta mixture. Gently toss to incorporate everything.
  3. Serve warm, topped with grated Parmesan cheese if desired.

Notes

This dish is best served warm right after preparation. Consider pairing it with a side salad or garlic bread.
