  • 2 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 cup chicken broth Ensure it's gluten-free if needed
  • 1/4 cup fresh lemon juice
  • 1/4 cup capers Can substitute with green olives or cooked artichoke hearts
  • 2 tablespoons fresh parsley, chopped

Method
 

Preparation
  1. Season the chicken breasts with salt and pepper.
  2. In a skillet, heat olive oil over medium heat and add the chicken. Cook until browned and cooked through, about 5-7 minutes per side. Remove chicken and set aside.
  3. In the same skillet, add garlic and sauté for 1 minute.
Cooking
  1. Add chicken broth, lemon juice, and capers. Bring to a simmer.
  2. Return the chicken to the skillet and simmer for an additional 5 minutes, allowing the flavors to meld.
  3. Garnish with fresh parsley before serving.

Notes

Serve over pasta or alongside steamed vegetables. Store leftovers in an airtight container for up to 3 days. Add a splash of chicken broth when reheating for moisture.
