  • 1/4 cup chia seeds
  • 1 cup almond milk (or any milk of choice)
  • 1/4 cup Greek yogurt (optional for creaminess) Use more for a creamier texture.
  • 2 tablespoons honey or maple syrup Adjust sweetness to taste.
  • 1 each lemon (zest and juice)
  • a pinch salt

Method
 

Preparation
  1. In a bowl, whisk together the almond milk, Greek yogurt, honey (or maple syrup), lemon zest, lemon juice, and salt until well combined.
  2. Stir in the chia seeds and mix thoroughly.
  3. Cover the bowl and refrigerate for at least 2 hours or overnight, allowing the chia seeds to swell and the mixture to thicken.
  4. Once ready, give it a good stir and serve chilled. Top with fresh fruits or nuts if desired.

Notes

Store any leftover pudding in an airtight container in the refrigerator for up to 5 days. The pudding may thicken more as it sits; add a splash of milk before serving to reach desired consistency. For a smoother pudding, strain out lemon pulp with a fine sieve.
