- In a bowl, whisk together the almond milk, Greek yogurt, honey (or maple syrup), lemon zest, lemon juice, and salt until well combined.
- Stir in the chia seeds and mix thoroughly.
- Cover the bowl and refrigerate for at least 2 hours or overnight, allowing the chia seeds to swell and the mixture to thicken.
- Once ready, give it a good stir and serve chilled. Top with fresh fruits or nuts if desired.
Notes
Store any leftover pudding in an airtight container in the refrigerator for up to 5 days. The pudding may thicken more as it sits; add a splash of milk before serving to reach desired consistency. For a smoother pudding, strain out lemon pulp with a fine sieve.
