Preparation
- Preheat your oven to 375°F (190°C).
- Heat the olive oil in a large skillet over medium heat.
- Add the diced onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and sauté for an additional minute until fragrant.
- Add the sausage to the skillet, breaking it apart with a spatula. Cook until browned and fully cooked, about 5-7 minutes.
- Stir in the bell peppers, oregano, and basil. Cook for another 2-3 minutes until the peppers are slightly softened. Season with salt and pepper to taste.
- Remove the skillet from heat and set it aside.
Assembly
- In a large baking dish, layer half of the sliced zucchinis at the bottom.
- Pour the sausage mixture over the zucchinis, spreading it out evenly.
- Add the remaining sliced zucchinis on top of the sausage mixture.
- Sprinkle the grated mozzarella cheese evenly over the top layer of zucchinis.
- Finally, top with the grated Parmesan cheese.
Baking
- Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
- Remove the foil and bake for an additional 10-15 minutes or until the cheese is bubbly and golden brown.
- Let the casserole cool for a few minutes before serving warm.
Notes
Serve warm with a light salad or steamed vegetables. Add red pepper flakes or fresh herbs for extra flavor. Store leftovers in an airtight container in the refrigerator for up to 3 days.
