Ingredients
  

Fish and Marinade
  • 4 fillets fillets of cod, halibut, snapper, or sea bass (about 6 oz each) Choose fresh fish for the best flavor.
  • 3 tbsp extra virgin olive oil
  • 1 juice Juice of 1 lemon
  • 1 tsp dried oregano
  • 1 tsp fresh basil or parsley, chopped For garnish.
  • to taste Salt and pepper Adjust according to preference.
Vegetable Mixture
  • 2 cups cherry tomatoes, halved
  • ½ cup Kalamata olives, pitted and sliced Can substitute with green olives.
  • 1 medium red onion, thinly sliced
  • 3 cloves garlic, minced

Method
 

Preparation
  1. Pat the fish fillets dry with paper towels. Season each fillet with salt, pepper, and a drizzle of olive oil.
  2. In a bowl, combine cherry tomatoes, olives, red onion, garlic, oregano, lemon juice, and olive oil. Toss well to mix all the ingredients.
Baking
  1. Place the seasoned fish in a baking dish. Spoon the tomato-olive mixture over the fish.
  2. Bake at 400°F (200°C) for 20-25 minutes or until the fish flakes easily with a fork.
Serving
  1. Garnish with fresh basil or parsley and an extra squeeze of lemon before serving.
  2. Serve alongside couscous, rice, or roasted vegetables for a complete meal.

Notes

Store leftovers in an airtight container in the refrigerator for up to two days. Avoid microwave reheating to maintain the dish's texture.
