Ingredients

  • 2-3 tbsp white or yellow miso paste
  • 1 tbsp fresh ginger, sliced or grated
  • 1 clove garlic, minced (optional) Optional ingredient for added flavor.
  • 1 Juice of 1 lemon (about 2-3 tbsp)
  • 4 cups low-sodium vegetable broth or bone broth (or water)
  • 1 tsp soy sauce or tamari (optional, for depth) Optional for enhancing flavor.
  • 2 green onions, chopped (for garnish) Garnish.
  • Fresh herbs (cilantro, parsley or baby spinach – optional) Optional for garnish.

Method
 

Preparation
  1. Bring the broth (or water) to a gentle simmer in a pot.
  2. Add the ginger (and garlic if using) and let it simmer for about 10 minutes to infuse the flavor.
  3. Remove from heat and let cool slightly—do not bring to a hard boil after the miso is added.
  4. In a small bowl, whisk the miso paste with a little warm broth to smooth it out, then stir it back into the pot.
  5. Add the lemon juice and soy sauce or tamari (if using). Stir to combine.
  6. Pour into mugs or bowls and garnish with chopped green onions and fresh herbs before serving.

Notes

Store any leftover broth in an airtight container in the fridge for up to three days. Reheat gently on the stove or in the microwave before serving again. Avoid boiling the miso during reheating to maintain its beneficial properties. Experiment with different types of broth, adjust ginger amount for taste, and add other vegetables for extra nutrition.
