Ingredients
  

For the Cookies
  • 1 cup unsalted butter, softened Make sure it's at room temperature.
  • 1 cup granulated sugar
  • 1 large egg Should be at room temperature.
  • 1 teaspoon vanilla extract
  • 2.5 cups all-purpose flour
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon salt
For the Buttercream Frosting
  • 0.5 cup unsalted butter, softened Make sure it's at room temperature.
  • 2 cups powdered sugar Sifted for a smooth frosting.
  • 1-2 tablespoons milk Add to achieve desired consistency.
  • 0.5 teaspoon vanilla extract
  • Gel food coloring (pastel pink, yellow, blue, purple) For coloring the frosting.
  • Colored sanding sugar For decorating.
  • Small chocolate chips or black decorating gel (for eyes) For enhancing the bunny cookies.

Method
 

Preparation
  1. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  2. Add the egg and 1 teaspoon of vanilla extract, mixing until smooth.
  3. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
  4. Gradually add this dry mixture into the wet ingredients until well combined.
  5. Wrap the dough in plastic wrap and chill it in the refrigerator for about 1 hour.
  6. Preheat your oven to 350°F (175°C).
Baking
  1. On a lightly floured surface, roll out the chilled dough to a 1/4-inch thickness.
  2. Use a bunny-shaped cookie cutter to cut out shapes and place them on parchment-lined baking sheets.
  3. Bake in the preheated oven for 8–10 minutes or until the edges are lightly golden.
  4. Let them cool completely on a wire rack.
Frosting
  1. In a mixing bowl, beat the softened butter until smooth.
  2. Gradually add the powdered sugar, vanilla extract, and 1–2 tablespoons of milk. Beat until fluffy.
  3. Divide the frosting into bowls and tint each with gel food coloring.
  4. Once the cookies are cool, frost each cookie and sprinkle colored sanding sugar on top.
  5. Add chocolate chips or black gel for the eyes.
  6. Let the frosting set before serving or packaging.

Notes

Store decorated cookies in an airtight container at room temperature for up to one week. For longer storage, freeze unfrosted cookies.
