  • 1 pound fresh asparagus Choose thin, tender asparagus for the best texture and flavor.
  • 1 tablespoon olive oil Drizzle over the asparagus to coat.
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons grated parmesan cheese Feel free to adjust the amount to suit your taste.
  • 1 tablespoon lemon juice Adds brightness to the dish.
  • Red pepper flakes Optional, for serving.

Preparation
  1. Preheat your oven to 425 degrees F and line a baking sheet with parchment paper.
  2. Rinse and dry the fresh asparagus. Trim the woody ends by cutting about an inch off the bottom.
  3. Spread the asparagus in a single layer on the baking sheet. Drizzle with olive oil and sprinkle with salt and pepper. Toss to coat, and sprinkle cheese over the top.
Cooking
  1. Roast in the oven for about 10 minutes, or until tender and slightly crispy.
  2. Remove from oven, squeeze lemon juice over the asparagus, and sprinkle with red pepper flakes if desired.
  3. Serve immediately.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in the oven at 350 degrees F for about 5-7 minutes. You can add garlic or toss in cherry tomatoes before roasting for extra flavor. Experiment with other cheeses like feta or cheddar for a different twist.
