Preparation
- Preheat your oven to 425 degrees F and line a baking sheet with parchment paper.
- Rinse and dry the fresh asparagus. Trim the woody ends by cutting about an inch off the bottom.
- Spread the asparagus in a single layer on the baking sheet. Drizzle with olive oil and sprinkle with salt and pepper. Toss to coat, and sprinkle cheese over the top.
Cooking
- Roast in the oven for about 10 minutes, or until tender and slightly crispy.
- Remove from oven, squeeze lemon juice over the asparagus, and sprinkle with red pepper flakes if desired.
- Serve immediately.
Notes
Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in the oven at 350 degrees F for about 5-7 minutes. You can add garlic or toss in cherry tomatoes before roasting for extra flavor. Experiment with other cheeses like feta or cheddar for a different twist.
