  • 2 medium sweet potatoes, sliced into rounds Cut into 1/4 inch thick rounds
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
Honey Feta Topping
  • 1 cup feta cheese, crumbled
  • 2 tablespoons honey
  • 1 tablespoon fresh herbs (optional, for garnish)

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Slice the sweet potatoes into rounds about 1/4 inch thick.
  3. In a bowl, toss the sweet potato rounds with olive oil, salt, and pepper.
  4. Arrange the rounds in a single layer on a baking sheet.
Roasting
  1. Roast in the oven for 25-30 minutes, flipping halfway through, until they are caramelized and tender.
Topping and Serving
  1. While the sweet potatoes are roasting, crumble the feta cheese and mix it with honey in a small bowl.
  2. Once the sweet potatoes are done, remove them from the oven and drizzle the honey feta mixture on top.
  3. Garnish with fresh herbs if desired and serve warm.

Notes

To store leftovers, place them in an airtight container in the refrigerator. They can last up to 4 days. Reheat in the oven to regain crispy texture, avoiding the microwave.
