  • 1 lb ground beef
  • 1 can green beans
  • 1 can corn
  • 1 can diced tomatoes
  • 1 medium onion, chopped
  • 2 cups potatoes, sliced
  • to taste salt and pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 cup shredded cheese (optional) Use if desired.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef along with the chopped onion until the beef is cooked through and the onion is translucent.
  3. Add the green beans, corn, diced tomatoes, and sliced potatoes to the skillet. Stir to combine.
  4. Season with salt, pepper, garlic powder, and onion powder.
  5. Transfer the mixture to a casserole dish.
Cooking
  1. Bake in the preheated oven for 45-50 minutes, or until the potatoes are tender.
  2. If using, sprinkle shredded cheese on top and bake for an additional 5 minutes until melted.
  3. Serve hot.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave before serving. Feel free to customize with your favorite vegetables like bell peppers or carrots. For a vegetarian version, replace ground beef with lentils or mushrooms.
