Ingredients
  

Cookie Base
  • 1 cup unsalted butter, softened Make sure it's at room temperature for easier mixing.
  • 1 cup granulated sugar
  • 1 large egg Room temperature.
  • 1 teaspoon vanilla extract
  • 2.5 cups all-purpose flour
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon salt
Toppings and Fillings
  • Vanilla or cream cheese frosting Or any preferred frosting.
  • Fruit preserves or jam
  • Fresh berries
  • Chocolate ganache
  • Sprinkles, crushed candy, or edible glitter For decoration.

Method
 

Preparation
  1. Preheat your oven to 350°F (180°C) and grease a 12-cup muffin pan.
  2. In a mixing bowl, beat the softened butter and granulated sugar until light and fluffy.
  3. Add the egg and vanilla extract, mixing until fully combined.
  4. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until combined.
  6. Roll the dough into 1-inch balls and place one ball into each muffin cup.
  7. Bake in the preheated oven for 10–12 minutes until the edges are lightly golden.
  8. While warm, gently press the centers with a spoon to create space for fillings.
  9. Allow the cookie cups to cool completely in the pan before removing.
  10. Once cooled, fill each cup with frosting or your choice of filling, and decorate as desired.

Notes

For best results, chill the dough if it's too soft to handle. You can also experiment with various fillings and toppings.
