  • 1 piece onion, quartered
  • 4 cloves garlic, minced
  • 10 pieces baby carrots Adjust quantity based on preference.
  • 1 small head cabbage, cut into wedges
  • 4 to 6 cups beef broth Homemade or high-quality store-bought recommended.
Spices
  • 1 tablespoon mustard seeds Add more for spiciness if desired.
  • 2 teaspoons black peppercorns Add more for a spicier dish.
Garnish
  • to taste chopped parsley Optional for garnish.

Method
 

Preparation
  1. Place the corned beef brisket in the slow cooker and cover it with beef broth.
  2. Add the onion, garlic, and mustard seeds to the slow cooker.
Cooking
  1. Cook on low for 8 hours or high for 4 hours, until the beef is tender.
  2. Add the carrots and cabbage during the last 2 hours of cooking.
Serving
  1. Once done, slice the corned beef against the grain and serve it with the vegetables.
  2. Garnish with parsley if desired.

Notes

For added richness, consider using beef broth made from scratch. Ensure the corned beef is fully submerged in the broth for even cooking.
