  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 4 pieces ripe bananas, sliced Use ripe bananas for best flavor.
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg (optional) Use if desired.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the flour, granulated sugar, brown sugar, baking powder, and salt.
  3. Add the melted butter, milk, and vanilla extract to the dry ingredients. Stir until just combined to form a smooth batter.
  4. Grease a 9×13 inch baking dish with non-stick cooking spray or butter.
  5. Pour the batter evenly into the prepared baking dish.
  6. Arrange the sliced bananas on top of the batter.
  7. In a small bowl, mix the cinnamon and nutmeg (if using) and sprinkle it evenly over the bananas.
Baking
  1. Bake in the preheated oven for about 45-50 minutes or until the top is golden brown and a toothpick inserted in the center comes out clean.
  2. Remove from the oven and let it cool slightly before serving.

Notes

Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream. Store any leftovers in an airtight container for up to three days. Reheat before serving.
