  • 1 large ripe mango, peeled, pitted, and roughly chopped Choose a ripe mango for maximum sweetness.
  • 1/4 cup fresh lime juice (about 2 medium limes) Use fresh juice for the best flavor.
  • 1/4 cup fresh orange juice Use fresh juice for the best flavor.
  • 2 tablespoons honey Can be substituted with maple syrup for a vegan option.
  • 1/2 teaspoon ground cumin
  • 1 clove garlic Minced.
  • 1/2 teaspoon salt Adjust to taste.
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon finely chopped medium heat chili pepper (Fresno or jalapeƱo) Adjust spiciness to taste.
  • 2 tablespoons finely chopped cilantro
  • 1/3 cup extra virgin olive oil Pour in slowly while stirring to emulsify.

Method
 

Preparation
  1. Blend the mango, lime juice, orange juice, honey, cumin, garlic, and salt in a blender until smooth.
  2. Transfer the mixture to a medium-sized jar.
  3. Slowly pour in the olive oil while stirring continuously to emulsify.
  4. Mix in the chopped chili pepper, cilantro, and black pepper. Adjust salt as needed.
  5. Store in the refrigerator for up to 1 week, shaking before each use.

Notes

Give the dressing a good shake before serving to ensure ingredients are adequately mixed.
