  • 3.5 cups unbleached all-purpose flour
  • 0.75 teaspoon kosher salt
  • 0.75 teaspoon baking soda
  • 1.5 cups buttermilk Use room temperature buttermilk for the best rise

Method
 

Preparation
  1. Preheat the oven to 450°F (230°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, salt, and baking soda.
  3. Make a well in the center and pour in the buttermilk.
  4. Stir gently until the mixture is combined and shaggy.
  5. Lightly flour a work surface, turn out the dough, and knead gently 4 times. Shape it into a round loaf.
  6. Transfer to the prepared baking sheet, sprinkle with flour, and score an 'X' on top.
Baking
  1. Bake for 15 minutes at 450°F, then lower to 400°F and bake for another 25-30 minutes until golden brown.
  2. Cool for at least 20 minutes before serving.

Notes

Serve warm with butter, or alongside soups, stews, and salads. Store wrapped in a clean cloth or airtight container for up to two days, or freeze slices for longer storage.
