Ultimate Colcannon

A flavorful twist on traditional Irish mashed potatoes, combining white and sweet potatoes with Brussels sprouts and parmesan for a hearty side dish.

Ingredients
  

Potatoes and Vegetables
  • 1.5 lbs white potatoes (washed, skin left on)
  • 1 lbs sweet potatoes (washed, skin left on)
  • 3 cups Brussels sprouts (outer leaves removed, thinly sliced)
  • 2 large shallots (diced)
  • 2 cloves garlic (finely chopped)
  • 1/2 cup parsley (finely chopped)
Dairy and Fats
  • 1.5 tbsp extra virgin olive oil
  • 2 tbsp butter
  • 2/3 cup milk
  • 1/3 cup freshly grated parmesan cheese
Seasoning
  • 1 tsp sea salt flakes
  • 1/2 tsp black pepper (freshly ground)

Method
 

Preparation
  1. Gather all your equipment and ingredients. Preheat your oven to 350ºF (180ºC, gas mark 4).
  2. Pierce the white and sweet potatoes several times with a fork. Place them on a baking tray and bake for about 1 hour until tender.
  3. When done, slice the potatoes open to let steam escape and allow to cool.
Cooking
  1. Heat olive oil in a frying pan and sauté Brussels sprouts, shallots, and garlic for 12-15 minutes until softened.
  2. In a saucepan, warm the milk and melt the butter. Keep warm.
  3. Scoop potato flesh into separate bowls and mash until smooth. Mix warm milk into sweet potatoes and season.
  4. Stir parmesan into the white potato mash, then fold in sautéed veggies.
  5. In a baking dish, alternate white and sweet potato mixtures to create a marbled effect. Top with extra cheese.
  6. Bake for 15 minutes until heated through and cheese melts.
  7. Optionally drizzle olive oil before serving. Enjoy warm.

Notes

Select fresh Brussels sprouts for the best flavor and texture. Feel free to add more butter or milk for extra creaminess. Use a potato masher instead of a mixer for fluffier potatoes.
