Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 1 tsp ground cinnamon
  • 0.5 tsp salt
Wet Ingredients
  • 0.5 cups sugar
  • 0.5 cups melted butter or oil Use melted for best results
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1.5 cups chopped or grated apples Granny Smith, Honeycrisp, or Fuji
Glaze
  • 1 cup powdered sugar
  • 2-3 tbsp milk Adjust for desired consistency
  • 0.5 tsp vanilla extract

Method
 

Preparation
  1. In a bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt until well combined.
  2. In another bowl, combine the sugar, melted butter or oil, eggs, and vanilla extract. Mix until smooth.
  3. Gently fold the dry mixture into the wet mixture until just combined. Be careful not to overmix. Then, fold in the chopped or grated apples.
Baking
  1. Spoon the batter into a lined muffin tin, filling each cup about two-thirds full.
  2. Bake in a preheated oven at 350°F (175°C) for 20–22 minutes, or until a toothpick inserted in the center comes out clean.
  3. Allow the muffins to cool completely.
Glazing
  1. Whisk the powdered sugar, milk, and additional vanilla extract in a bowl until smooth and creamy.
  2. Drizzle the glaze over the cooled muffins. Serve them warm or at room temperature for the best flavor.

Notes

Store these muffins in an airtight container at room temperature for up to three days. They can be frozen for about three months.
